I suggest the following principles:
1. Having the docs 100% in sync with the product is a nice goal, but
it will never be perfectly attained until the product is frozen, which
in this kind of project means "dead".
2. Most users prefer documentation that matches features, but if they
have to make a choice, they mostly prefer to have the features.
3. Some things are pretty easy to understand even if the
documentation is slightly off. Adding another checkbox with an
obvious label to an existing dialog will probably be acceptable to
most users.
4. Some things are too hard to understand if the documentation is
wrong. For example, changing the semantics of some piece of the UI
can lead to a lot of confusion if the docs are one way and the product
is another.
